Aloo Paratha Punjabi Style - Potato Stuffed Paratha - Vegan Recipe

Ingredients for Aloo ka Paratha: Whole wheat chapatti dough as required with some salt in it 4 medium size boiled and peeled potatoes 1 medium size onion, finely chopped 2 tbsp. coriander leaves, chopped 2 tbsp. mint leaves, chopped 2 green chilies, finely chopped Mozzarella cheese as required Salt to taste 1 tsp full red chili powder 1 tsp crushed coriander 1 tsp cumin powder ½ tsp carom seeds 2 pinch nutmeg powder 2 pinch mace powder Oil/ghee for toasting parathas

METHOD: 1.In a bowl, mash potato or until no chunks. 2.Add all the spices, chopped onions, coriander leaves, mint leaves and green chilies. 3.Mix to combine. Set this Aloo paratha stuffing aside. 4.Divide chapatti dough into 2 equal balls. Give them a shape using a rolling pin and flatten like a chapatti. 5.Spread 1 tsp of oil/ghee onto chapatti, then place the potato stuffing in the center, leaving 1 inch of space around the sides. 6.Take second chapatti, and place over it. Press from the sides to secure stuffing inside. 7.Sprinkle some flour and roll paratha, just like the regular chapati size. 8.Spread 1 tsp ghee on hot tava/chapatti skillet and place the rolled paratha. 9.Cook for 30 seconds, and then flip the side. 10.Now add 2-3 tsp ghee and cook both sides till light golden in color. Press sides to cook properly. 11.Serve directly with some butter, chatni/Raita or yogurt. 12. Enjoy. Good Luck!
