Khubani Ka Meetha - Hyderabadi Khubani ka Meetha- Apricot Dessert




Leran how to make Qubani ka meetha (خوبانی کا میٹھا) which is an Indian dessert made from dried apricots originating from Hyderabad.It is a common feature at Hyderabadi weddings. It can be served with Custard or Ice cream and is traditionally garnished with malai (fresh cream) and apricot kernels.
Ingredients for KHUBANI KA MEETHA: 800 gram 6 ½ cups dried apricot (khubani) soaked overnight and deseeded 1 ½ cups of sugar ½ cup honey ½ tsp green cardamom powder/crushed ¼ tsp cinnamon powder Kernels of apricot Vanilla custard for serving Fresh cream for garnish
METHOD: 1.In a large bowl, add 4-5 cups of water and soak pre washed apricot into it. Overnight or minimum 8 hours. 2.Next day remove all the seeds. Break nut shell and collect all the kernels out of it, set aside. Do not discard apricot water, save it for later on use. 3.Then in a wok, on high heat, add sugar, apricot, green cardamom powder, cinnamon powder and honey. Mix well and cook for 1 minute to caramelized sugar a little bit. 4.Afterwards, add apricot water, mix, cover and let it cook for 30-40 minutes on medium flame or until apricots are soft enough to mash. 5.Do not dry all the syrup, leave some for soft texture otherwise end product will be hard. So keep an eye on in between. 6.Finally mash with potato masher or spoon, add apricot kernels, mix and serve. Serving Suggestion: In a serving bowl add creamy vanilla custard, khubani ka meetha as required, garnish with fresh cream and sliced apricot kernels. If you don’t have custard, enjoy with plain fresh cream.
