MUTTON PAYA (Goat Trotters) How to make goat trotters easy recipe

Ingredients for Mutton Paya Trotters: 8-12 mutton trotters/Paya For Trotters stock/yakhni: 6-7 garlic pods 1 tbsp. crushed coriander 1 tsp salt For Masala/Gravy: 3 large onions 4 tbsp. yogurt 1/3-1/2 cup ghee/oil (also add ¼ cup pure ghee/Desi ghee optional) 1 tbsp. ginger garlic paste 1-2 tbsp. red chili powder 1 tsp turmeric powder 1 tsp coriander powder 1 tbsp. garam masala 1 tsp black cumin, crushed For garnish: Chopped green chilies Chopped coriander Ginger, julienne Lemon wedges Method: 1.Wash trotters properly under running water to remove hairs. Cut each trotter into 2 or 3 pieces. 2.Step 1: Boil trotters in hot boiling water on medium high flame for 15 minutes. 3.After 15 minutes, discard the water and wash trotters again to remove any frothy substance on it. 4.Step 2: Place trotters in a pressure cooker, add 7-8 glasses of water. Add crushed coriander, salt and garlic. Cover and cook for 30-35 minutes in pressure cooker. 5.Step 3: Meanwhile, in a separate large pot, add sliced onion, add 3 cups of water. Cover and cook on medium high flame for 30-35 minutes or until onions are soft. 6.After 30 minutes open pressure cooker carefully and separate trotters and stock. Set them aside. 7.Step 3: add oil/ghee, pure ghee into the soften onions, add trotters, red chili powder, turmeric, coriander powder and cook on high flame for 5 minutes. 8.Now add yogurt and cook for another 5 minutes or till oil separates. 9.Add the stock of the trotters and more water (depending on how thin you want the gravy). 10.Cover and cook for 30-35 minutes on medium flame or till trotters are completely soft. 11.At the end turn off the flame and sprinkle garam masala, black cumin, cover and simmer for 2 minutes. 12.Garnish with crushed black cumin, green chilies, chopped coriander and ginger. 13.Serve with naan or boiled rice. 14.Enjoy. Good Luck! NOTES: 1.For better results always boil trotters for 15 minutes in hot water. 2.With this onion simmering method trotter’s gravy will be tastier compared to the fried onions method.
