Mix Sabzi Recipe - Mix Veg Recipe - Mix Veg Curry




Learn how to make easy homemade Mix Vegetable Curry. It consists of mix vegetables, cooked in a thick, spiced gravy. It is served as a main course with Chapatis, Paratha or Poori. Ingredients for Mix Sabzi (veg):
Veggies:
2 medium potatoes Carrot and peas 1 cup 1 medium cauliflower 2 medium tomatoes, sliced 1 medium onion, sliced Spices: Salt to taste 1 tsp red chili powder 1/2 tsp turmeric powder 1 tsp coriander powder 1 tbsp. fenugreek leaves 1 tsp cumin seeds 1/2 tsp whole spice powder 5 whole red chilies 1 chicken cube (optional) Oil: 2 tbsp. oil 4 tbsp. Desi ghee/pure ghee For Garnish: 4-5 green chilies 5 tbsp. coriander, chopped 3 tbsp. ginger, julienne 1 tsp lemon juice (optional)
Procedure: 1. In a pan heat oil and butter. 2. Break one whole red chili into the oil; add cumin seeds and remaining red chilies. Once the splutter ad the sliced onions. 3. Fry the onions till they become light golden brown. 4. Add the tomatoes, cover and cook for a couple of minutes. Then keep on mashing the tomatoes until they become smooth and soft. 5. Then add salt, red chili powder, turmeric powder, coriander powder, chicken cube and fenugreek leaves (crush them with your hands). 6. Now add all the veggies of your choice into this Masala. 7. Mix, add ½ cup of water, cover and let it cook on medium flame until they are done. 8. Check veggies occasionally, add more water if required or veggies are still to be cooked. 9. Finally, add lemon juice, chopped coriander, green chilies, ginger and whole spice powder. 10. Cover and simmer for 5 minutes. 11. Serve with paratha, Chapati or Poori. 12. Enjoy. Good Luck!
